Erica Nicholson and her spouse, along with then partner Jerry, began the Prior straight out of university, going on three decades ago now. The partners originally began the Prior thinking of it as more of a bar, but it has evolved into an enterprise where dining is top of mind. Over those years, the Prior family has expanded from blood relations and in-laws to one where loyal staff are embraced as part of the family unit- in the wider community that all are both pleased to participate in, and to serve.
